 Sweet Potato Protein Muffins

These muffins are great for anyone from your toddler to athlete. NO Flour, NO Dairy, NO Added Sugar. And like all my other recipes – SIMPLE!

INGREDIENTS

  • 3/4 cup cooked mashed sweet potato

  • 2 medium banana

  • 2 large eggs

  • 2/3 cup all natural peanut butter or all natural almond butter

  • Optional: 1/2 teaspoons cinnamon, 1/2 tsp nutmeg, 1/2 tsp ginger

  • 2 teaspoons baking powder

METHOD

  1. Preheat the oven to 350°F. Grease a muffin tin.

  2. Place all ingredients in a blender and combine until smooth. Make sure the sweet potato is cooled a little before adding it in.

  3. Pour the mixture into the muffin tin, filling each cup 3/4 of the way full.

  4. Bake in preheated oven for 20 minutes until a toothpick inserted in the center of a muffin comes out clean.
